This is one of the best fried rice recipes I have, and everyone I’ve ever made it for have been just over the moon about how delicious it is. Fresh pineapple, juicy shrimp, aromatic curry powder…Yum!

About Pai:

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin’s Kitchen.

Pai was born and raised in southern Thailand where she spent much of her “playtime” in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

  1. Never tried Thai food before. Between a hiatus hernia and stomach ulcers, spicy food has always been OUT for me. But this looks like I will be more than willing to suffer any accompanying discomfort I may get from the tomato and spices used.
    Thanks Pailin. Am new but I can sit here all day and have my mouth water like crazy at your food and thoroughly enjoy your presentation of your show too 🙂
