Tried this recipe without fish sauce. The soup lacked in flavor quite a bit without it, so it's a must have. I'll add more stock next time and more salt I think.
Is there any alternative to eggplant? Both my girlfriend and I ended up hating the mushyness of the eggplant, which wasn't all that bad since we just picked it out haha.

For the coconut extract, what do you use. And also could we possibly use one that has a lower extract percentage but add less water or something along those lines.
