Curry Fried Rice – Quick and Easy Vegan Recipe!

This is a super quick and easy vegan curry fried rice recipe that you can make any time you want something tasty that is really good for you too!

Eat as a meal itself, or you can use it as a side dish, or even as a rice salad at party etc. Best of all, kids love this too and it is very easy to change the spices and ingredients around to vary it up a bit 🙂

This recipe has no added oil or fat and is 100% plant based vegan!

Ingredients:

3 large cloves of garlic grated or minced (about 2 to 3 tsp of grated garlic)
1 large thumb size of ginger grated (about 3 tsp of grated ginger)
1/4 cup vegetable broth
1 small Spanish onion chopped
1/2 cup frozen peas
1/2 frozen corn kernels
3 tbs sliced scallions
3 cups cooked rice (I used white organic)
1 tbs curry powder
OPTIONAL EXTRAS:
salt, pepper, Mrs Dash seasonings, soy sauce, sesame oil etc

  2. Your stove looks like a lawsuit waiting to happen. Lol. Who was the designer who thought it'd be a good idea to put touch screen buttons on a stove with no markers showing where it starts and stops?

  3. Looks like another super idea/recipe of yours. I know it would change the taste somewhat, but have you tried adding all those ingredients in a rice cooker & just letting it all cook? I think I might try that.

  4. Today I made this for the first time. I'm very much a novice when it comes to cooking plant based. Had no idea how sweet ginger smells. Nor did I know the ginger with onions, garlic, scallions and pepper would produce more flavorful heat. I made the mistake of adding red pepper flakes. It wasn't necessary. Overall, it came out great. Just need to learn how to tweak the ingredients to my taste. Thank you for sharing this with us. It will become a regular fixture on my plate. Oh, it's the first time my kitchen truly smelled like I walked into a chinese restaurant! lol
