Delicious Chicken Stir-Fry with Rice Noodles Recipe

Step-by-Step Instructions
Step 1: Soak the Rice Noodles
First off, you’re gonna soak our noodles. Now these are rice noodles. Place them into a bowl and just pour hot water over the rice noodles. Soak and rehydrate for 12 to 15 minutes to soften up.
Step 2: Prepare the Chicken
If you have a wok, perfect. If not, just use a normal-sized frying pan with big sloping sides. Get the pan really nice and hot. Take the chicken breast, which is very lean and hardly has any fat on it. You’ll notice there’s a little fillet; just slice that off.
The secret to getting it really nice and thin and cutting it into strips is to take your knife, keep it nice and flat on the board, and sort of slice it in half like a sort of scholar, like that. We call this butterflying the chicken. Take a rolling pin and gently roll over the chicken. What this does is sort of flatten it and allows you to slice it even thinner. The thinner we slice the chicken, the crisper it gets and the quicker it cooks. Slice it in half to start, then slice these nice thin slices. The good news is one chicken breast can serve two or three people easily.
Step 3: Slice the Garlic and Broccoli
Next, wash your knife and finely slice the garlic. The thinner the garlic, the crispier it gets. For the broccoli, use young tender broccoli and just slice them down. You want bites of broccoli in the dish. Normally, you sort of pace the dish with one-third noodles, one-third vegetable, and one-third of your protein, which in this case is chicken.
Step 4: Cook the Chicken and Garlic
With a dish that takes literally minutes to put together, it’s really important to get everything organized. Everything needs to be at your fingertips. Add a touch of olive oil and get the pan really nice and hot. Once it’s just starting to smoke, drop the chicken in first, adding a bit of salt and pepper, and open up those little strands of chicken.
Once we start to sear off the chicken, get the garlic in. Let that get really nice and crispy. The way to do it is to sort of spread the chicken and garlic on the side of the pan. You see why it’s so important to cut the chicken into thin strips because it colors and cooks at the same time as well. This is really, really crucial.
Step 5: Add the Broccoli and Soy Sauce
Now that the garlic is really nice and crispy, add the broccoli in. It might feel strange putting raw broccoli in like that, as we normally blanch it in boiling water and then draw it out. However, we want that crunch in this dish. Add a splash of soy sauce. This helps to season it but also stains it beautifully. Add the soy sauce and mix it well.
Step 6: Drain the Noodles and Finish the Stir-Fry
Next, drain your noodles. This is a really exciting way of finishing this quick stir-fry. It’s very classic. Take two eggs and whisk them up really well. Spread the eggs by the side of the pan and lightly season them.
Add the noodles, chicken, and broccoli back into the pan and give it a really nice mix. You want the egg to sort of almost bring the dish together. Cook until the egg is done, ensuring even distribution of chicken, broccoli, and garlic.
Step 7: Serve and Enjoy
Finish the dish with a squeeze of fresh lime. There you have it – a very simple and delicious chicken stir-fry with rice noodles. Enjoy your meal!
