How to Cook Filipino Style Chicken Curry with Gata Coconut Milk
Filipino dishes are not known to be spicy, but the Asian influence has introduced us to some spicy flavors and seasonings. One of them is the curry. The introduction of this spice could be attributed to the Indian influence brought about by trading many centuries ago.
One of the popular dishes that use curry is Chicken Curry. This popular dish is not only known in Asia but in the Caribbean as well. The Indian version uses curry powder while the Thais use curry paste. The main ingredients are chicken and curry, which is usually in powder form. Several spices are mixed with the curry to create a thick and rich sauce to enhance the chicken.
Our version combines it with coconut milk, bell peppers and potatoes. It is like a creamy stew with the curry flavor on the mild side. The coconut milk balances off the spiciness of the curry. The local dish that closely resembles this is the Ginataang Manok (Chicken Stewed in Coconut Milk) because they both cook the chicken in coconut milk.

Ingredients:
1 lb chicken
2 medium sized potatoes, peeled and quartered
3 stalks celery, cut into 1 1/2″ long
1 small red bell pepper, cubed
1 small green bell pepper, cubed
1 thumb ginger, cut into thin strips
1 cup coconut milk
1 large onion, quartered
3 cloves garlic, minced
3 tbsp curry powder
1 cup water
1 tbsp patis (fish sauce)

How to cook simple chicken curry (Indian style) in yogurt based gravy with basic Indian spices.
Ingredients:
(Serves 2-3)
350 gms boneless chicken
2 small potatoes
1 inch ginger piece
3-4 cloves of garlic chopped
1 large onion
1 green chilli
1/2 cup of Yogurt + 1/2 cup of water
1/2 tsp red chilli pwd
1/2 tsp turmeric
2 tsp Salt
1/2 tsp coriander pwd
1/2 tbsp Tomato paste
2 tbsp oil for cooking
1 tsp cumin seeds
1/2 tsp garam masala
Pinch of Kasoori methi (Dried fenugreek leaves)
Garnish with cilantro leaves
1. Fry cumin seeds in hot oil
2. Add onions, ginger, garlic, green chilli and fry for 2-3 mins
3. Mix yogurt, water and spices to make sauce.
4. Once onions start turning golden brown, add chicken and let it get white (sealing in the juices). Usually takes 2-3 mins
5. Next, add potatoes. fry for 2 mins.
6. Add tomato paste. Mix it well.
7. Add yogurt sauce.
8. Everything will be done in about 4-5 mins. (Cooking time depends on cut of the chicken. Make sure potatoes are cooked as well.)
9. Once chicken is cooked, add garam masala and dried fenugreek leaves. Garnish with cilantro leaves and serve with roti, rice or naan Video Rating: / 5

This recipe utilizes chicken legs, but can also me made with chicken thighs. The degree of heat for this curry can be easily adjusted by adjusting the amount of scotch bonnet pepper that is added to the pot.
Here’s a quick recipe for curry chicken with tender chickpeas and potato, done by Caribbean cookbook author Chris De La Rosa. we’ll start off by marinating cubed pieces of chicken breast in Caribbean green seasoning before we begin with a traditional method of cooking curry dishes on the islands.
For this chicken curry with chickpeas (channa), you’ll need…
1 lb boneless chicken breast
1 can chick peas (about 2 cups)
1 1/2 tablespoon curry powder
1/2 scotch bonnet
1/4 teaspoon salt
1 tomato
1 teaspoon Caribbean green seasoning
2 tablespoon veg oil
1/4 teaspoon black pepper
3 cloves garlic
1/2 small onion
2 tablespoon cilantro (or shado beni)
2 cups water
1 large potato
2 slices ginger (optional)
