Curry Chicken In Coconut Milk Recipe

How To Make Coconut Curry Chicken

Soak chicken in salt vinegar water solution for 30 minutes then rinse chicken off.

Season clean chicken with 3 Tbs Seasoning salt, 1 Tsp Salt, 2 Tbs Garlic Powder, 2 Tbs Onion Powder, Black Pepper, 1 Tbs Ground Ginger, 1 Tbs Thyme, 1 Tbs Ground All Spice, 1 Tsp Cumin

Mince 2 Bell Peppers, Scallions, and 1 Onion together with Minced Garlic

Chop up Carrots into small pieces. Peal and cut 3 Potatoes.

Place a pot over medium heat

Add 1/2 stick of Butter and 3 Tbs of Olive Oil

Add your minced vegetables

Add 3 Tbs of Curry Powder

Add 1 can of Coconut Milk

Stir in until well blended

Add seasoned chicken pieces

Add Carrots & Potatoes

Cover with a top and allow the chicken to cook for 45 minutes

Stir occasionally until done

  2. This looks nothing like my mother's Chicken Curry.
    Her Chicken Curry had a thick gravy to it, it was more
    like a stew and she would pour it over the rice and it
    was light yellow in color.
